Blanquette de Veau Ingredients:
- 1 kg (2.2 lbs) veal shoulder or veal stew meat, cut into cubes
- 1 onion, halved
- 2 carrots, sliced
- 1 leek, sliced (optional)
- 2 cloves garlic
- 2 cups veal or chicken stock
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1/2 cup heavy cream
- 1 egg yolk
- 1 tsp lemon juice
- 2–3 sprigs fresh thyme
- 1 bay leaf
- Salt and white pepper, to taste
- Fresh parsley, chopped (for garnish)
Blanquette de Veau Instructions:
Place veal, onion, carrots, leek, garlic, thyme, and bay leaf in a pot; cover with stock.
Bring to a gentle simmer; cook for 1–1.5 hours until veal is tender.
Remove veal and vegetables; strain cooking liquid and set aside.
Melt butter in a pan; whisk in flour to make a roux, cook for 1–2 minutes without browning.
Gradually whisk in strained stock to create a smooth white sauce; simmer until slightly thickened.
In a small bowl, blend egg yolk and cream; temper by adding a little hot sauce, then stir into sauce.
Return veal and vegetables to sauce; heat gently without boiling.
Add lemon juice, adjust seasoning with salt and white pepper.
Garnish with fresh parsley and serve hot with rice, noodles, or potatoes.
