Bún Chả Ingredients:

  • 300 g pork mince
  • 200 g pork belly slices
  • 2 cloves garlic, minced
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 200 g rice vermicelli (bún)
  • Lettuce leaves
  • Fresh herbs (mint, coriander, Thai basil)
  • Sliced cucumber

For the Dipping Sauce:

  • 1/2 cup warm water
  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1 tbsp lime juice or vinegar
  • 1 clove garlic, finely chopped
  • 1 small chili, sliced
  • Pickled carrot and daikon (optional)

Bún Chả Instructions:

Mix pork mince with garlic, fish sauce, sugar, pepper, and oil.

Shape the mixture into small flat patties.

Grill or pan-grill pork patties until cooked and lightly charred.

Grill pork belly slices until golden and slightly crispy.

Cook rice vermicelli according to package instructions and drain.
