For the Croustade Shells:
- 12 slices white sandwich bread (crusts removed)
- 4 tablespoons melted butter (for brushing)
For the Cheese Filling:
- 1 cup shredded sharp cheddar cheese (or gruyère)
- 1/2 cup cream cheese, softened
- 1/4 cup heavy cream or milk
- 1 egg yolk
- 1/4 teaspoon Dijon mustard (optional)
- 1/4 teaspoon ground black pepper
- Pinch of salt
Optional Garnishes:
- Fresh parsley, chopped
- Paprika or chili flakes
- Tiny bits of cooked bacon or caramelized onion
Prepare the Croustade Shells:
Preheat the oven to 180°C (350°F).
Flatten each bread slice using a rolling pin.
Cut each flattened slice into circles using a cookie cutter or glass.
Press each round gently into a mini muffin tin to form a cup shape.
Brush the inside of each cup with melted butter.
Bake for 8–10 minutes or until golden and crispy. Set aside to cool.
Make the Cheese Filling:
In a bowl, mix together the shredded cheddar, cream cheese, and cream until smooth.
Add the egg yolk, mustard (if using), black pepper, and salt.
Mix until well combined.
Spoon or pipe the cheese mixture into the cooled bread cups.
Bake the Croustades:
Return the filled croustades to the oven and bake for another 5–7 minutes, or until the cheese is bubbling and lightly golden on top.
Serve:
Remove from the oven and let cool slightly.
Garnish with chopped parsley, a sprinkle of paprika, or your favorite topping.
