Chicken & Chorizo Jambalaya Ingredients:

  • 1 tablespoon olive oil
  • 2 chicken breasts, diced
  • 1 onion, finely chopped
  • 1 red pepper, thinly cut
  • 2 cloves garlic, minced
  • 75 grams chorizo, sliced
  • 1 tablespoon Cajun seasoning
  • 250 grams long grain rice
  • 400 gram can plum tomatoes
  • 350 milliliters chicken stock

How To Make Chicken & Chorizo Jambalaya

Heat 1 tablespoon of olive oil in a large frying pan with a lid and sauté 2 diced chicken breasts for 5-8 minutes until they turn golden brown.

Remove the chicken and set it aside. Add 1 diced onion to the pan and cook for 3-4 minutes until it becomes soft.

Stir in 1 thinly sliced red pepper, 2 crushed garlic cloves, 75 grams of sliced chorizo, and 1 tablespoon of Cajun seasoning. Cook for an additional 5 minutes.
