- 2 chicken breasts, diced
- 1 onion, finely chopped
- 1 red pepper, thinly cut
- 2 cloves garlic, minced
- 75 grams chorizo, sliced
- 1 tablespoon Cajun seasoning
- 250 grams long grain rice
- 400 gram can plum tomatoes
- 350 milliliters chicken stock
How To Make Chicken & Chorizo Jambalaya
Heat 1 tablespoon of olive oil in a large frying pan with a lid and sauté 2 diced chicken breasts for 5-8 minutes until they turn golden brown.
Remove the chicken and set it aside. Add 1 diced onion to the pan and cook for 3-4 minutes until it becomes soft.
Stir in 1 thinly sliced red pepper, 2 crushed garlic cloves, 75 grams of sliced chorizo, and 1 tablespoon of Cajun seasoning. Cook for an additional 5 minutes.
Recipe Notes:
Use bite-sized chicken pieces for fast, even cooking.
Brown chicken and chorizo separately to enhance depth of flavor before adding other ingredients.
Saute onions, celery, and bell peppers until they soften yet still hold slight texture.
Stir in garlic and Cajun seasoning just before adding rice and broth to release their aromas.
Simmer covered until rice absorbs liquids and the dish thickens.
Taste and adjust seasoning before serving.
Garnish with fresh parsley for a bright, herbaceous finish.
Leftovers store well—reheat gently to retain texture and flavor.
