Chicken Noodles Soup Ingredients :
- 900ml chicken or vegetable stock (or miso soup mix)
- 1 boneless, skinless chicken breast (approximately 175g)
- 1 teaspoon finely chopped fresh ginger
- 1 clove garlic, finely chopped
- 50g rice or wheat noodles
- 2 tablespoons canned or frozen sweetcorn
- 2-3 thinly sliced mushrooms
- 2 spring onions, shredded
- 2 teaspoons soy sauce, plus extra for serving
- Optional: mint or basil leaves and a little shredded chili for garnish
How To Make Chicken Noodles Soup
Pour the stock into a saucepan and add the chicken breast, ginger, and garlic. Bring to a boil, then reduce the heat, partially cover, and simmer for 20 minutes until the chicken is tender.
Transfer the chicken to a cutting board and shred it into bite-size pieces using two forks. Return the shredded chicken to the stock along with the noodles, sweetcorn, mushrooms, spring onion, and soy sauce. Simmer for 3-4 minutes until the noodles are tender.
Divide the soup into two bowls and garnish with the remaining spring onion, mint or basil leaves, and chili (if using). Serve with extra soy sauce on the side.
