- 1 can (400g) chopped tomatoes
- 2 tbsp tomato paste
- 1 can (400g) kidney beans, drained and rinsed
- 1 can (400g) black beans (optional)
- 1 cup beef stock (or water)
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp oregano
- 1/2 tsp cayenne pepper (adjust to taste)
- Salt and black pepper, to taste
- Fresh cilantro, chopped (for garnish)
Chili con Carne Instructions:
Heat olive oil in a large pot; sauté onions and garlic until soft.
Add ground beef; cook until browned, breaking it up with a spoon.
Stir in chili peppers, bell pepper, cumin, paprika, oregano, and cayenne.
Add tomato paste, canned tomatoes, and stock; stir well.
Simmer uncovered on low heat for 30–40 minutes, stirring occasionally.
Add kidney beans (and optional black beans); cook another 10 minutes.
