How To Make Chinese Chicken Fried Rice
Heat a wok over medium-high heat for 5 minutes. Add oil, then scramble the eggs until just cooked. Remove the eggs from the wok and set aside.
Reheat the wok until very hot and add more oil.
Stir-fry the sliced chicken breast until cooked through.
Add the cooked rice and continue stir-frying until it starts to brown slightly.
Toss in the mixed vegetables and stir-fry until everything is fully cooked.
Pour in the light soy sauce and stir to combine.
Return the cooked eggs to the wok and stir-fry until they break into pieces.
Finally, add the spring onions, mix well, and serve.
Recipe Notes
Dry Out Rice: Always use chilled or day-old rice for the best texture; fresh rice can turn mushy.
High-Heat Frying: Cook on high heat to give the rice and chicken a smoky, slightly crisp finish.
Cook Separately: Scramble the eggs and cook chicken first, then combine everything at the end.
Serve Hot: Fried rice is best served straight from the pan while steaming and aromatic.
Storage Tip: Store leftovers in the fridge for up to 2 days and reheat in a hot pan for freshness.
