Cotechino con Lenticchie Ingredients:
- 1 cotechino sausage (about 500–600g / 1–1.3 lbs)
- 1 cup dried lentils, rinsed
- 1 small carrot, diced
- 1 celery stalk, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups water or vegetable broth
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 bay leaf

Cotechino con Lenticchie Instructions:
If needed, prick the cotechino casing with a fork and boil in water for about 15–20 minutes to reduce fat.
In a large pot, heat olive oil and sauté diced onion, carrot, celery, and garlic until softened.
Add rinsed lentils, water or broth, and bay leaf; bring to a boil, then reduce to a simmer.
Simmer lentils for 30–40 minutes until tender, stirring occasionally.
Meanwhile, fully cook the cotechino by simmering in water for 60–90 minutes until heated through and tender.
