Crispy Pork Belly with Basil Ingredients:
- 700 g pork belly, skin on
- Salt to taste
- Black pepper to taste
- 2 tbsp oil
For Stir-Fry:
- 6 cloves garlic, sliced
- 2 red chilies, sliced
- 1 cup fresh basil leaves
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
Crispy Pork Belly with Basil Instructions:
Score the pork skin lightly and season with salt and pepper.
Roast or boil pork belly until just cooked, then let cool.
Cut pork into bite-sized pieces.
Heat oil in a pan over medium-high heat.
Fry pork pieces until skin is crispy and golden.
Remove excess oil, leaving a little in the pan.
Add garlic and chilies and sauté briefly until fragrant.
Return pork to the pan and toss well.
Add soy sauce, oyster sauce, and sugar.
Stir-fry quickly to coat evenly.
Add basil leaves and toss until just wilted.
Remove from heat and serve immediately with rice.
