Greek Bruschetta Ingredients :
- 1 baguette
- 10 cherry tomatoes
- 1-2 Persian or Lebanese cucumbers
- 150 grams olive spread
- 100 grams feta cheese
- ¼ red onion
- Drizzle of olive oil
- Garlic clove
For the dressing:
- 3 tablespoons extra virgin olive oil
- 1 tablespoon white vinegar
- Juice of ½ lemon
- 1 teaspoon dried oregano
- Pinch of salt
How To Make Greek Bruschetta
Prepare the vegetables by halving the cherry tomatoes and thinly slicing the red onion. Use a peeler to create cucumber ribbons.
In a small bowl or ramekin, combine all dressing ingredients and whisk together.
Slice the baguette diagonally into approximately 20 slices. Place them flat on a baking tray lined with parchment paper and lightly drizzle with olive oil. Toast in a preheated oven at 180°C/350°F for 3-4 minutes until golden brown.
Remove the toasted baguette slices from the oven and rub them with a garlic clove.
To assemble, spread olive spread on each toasted baguette slice. Top with a rolled cucumber ribbon, half a cherry tomato, and a few slices of red onion. Crumble feta cheese over the top, drizzle with the prepared dressing, and they are ready to be served!
