Greek Fava Ingredients:

  • 1 cup yellow split peas (fava beans)
  • 4 cups water or vegetable broth
  • 1 small onion, chopped
  • 2-3 garlic cloves, minced
  • 3 tablespoons olive oil (plus more for drizzling)
  • 1 tablespoon lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • Fresh herbs (e.g., parsley or dill) for garnish

How to make Greek Fava :

1

Prepare the Split Peas:Rinse the yellow split peas under cold water until the water runs clear.

2

Cook the Peas:In a pot, combine the split peas, water (or broth), chopped onion, and minced garlic. Bring to a boil over medium heat, then reduce to a simmer. Cover and cook for about 30-40 minutes, or until the peas are soft and have absorbed most of the liquid.

3

Blend the Mixture:Remove from heat and let cool slightly. Use an immersion blender or transfer to a food processor. Blend until smooth and creamy. If it’s too thick, add a little water or olive oil to reach your desired consistency.

4

Add Flavor:Stir in olive oil, lemon juice, salt, and pepper. Adjust seasoning to taste.

5

Serve:Transfer the fava to a serving bowl. Drizzle with extra olive oil and garnish with fresh herbs. Serve warm or at room temperature with pita bread, crackers, or fresh vegetables.

Recipe Notes:

Flavor Variations:You can add spices like cumin or smoked paprika for extra depth of flavor.

Storage:Greek Fava can be stored in an airtight container in the refrigerator for up to a week. It can also be frozen for longer storage.

Serving Suggestions:This dish is great as an appetizer, a part of a mezze platter, or as a spread in sandwiches.

Garnishing:Consider topping with chopped olives, sun-dried tomatoes, or feta cheese for added flavor and texture.
