For the Chicken:
- 1 kg chicken drumettes or wingettes (lollipop style if preferred)
- 2 tablespoons olive oil
- Juice of 1 lemon
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes (optional)
For Serving (Optional):
- Tzatziki sauce
- Lemon wedges
- Fresh parsley, chopped
Marinate the Chicken:
In a large bowl, combine olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and chili flakes.
Add the chicken and toss to coat evenly.
Cover and marinate for at least 1 hour in the fridge (optional but recommended for flavor).
Cook the Chicken Pops:
Preheat oven to 200°C (400°F) or heat a grill pan over medium-high heat.
Arrange the chicken on a lined baking tray or grill pan.
Bake or grill for 20–25 minutes, flipping halfway, until golden brown and cooked through (internal temp 75°C / 165°F).
Serve:
Transfer to a platter, sprinkle with chopped parsley, and serve with lemon wedges and tzatziki sauce on the side.
