For the Maibowle:

  • 1 bunch of fresh sweet woodruff (about 10–15 sprigs), wilted overnight
  • 1 bottle (750 ml) dry white wine (e.g., Riesling or Sauvignon Blanc)
  • 1 bottle (750 ml) sparkling wine (e.g., Sekt or Champagne), chilled
  • 2 tablespoons sugar (adjust to taste)
  • 1 lemon, sliced
  • 1/2 cup fresh strawberries or raspberries (optional, for garnish)
  • Ice cubes (optional)

Prepare the Woodruff:

1

Harvest or purchase fresh sweet woodruff.

2

Rinse and pat dry.

3

Let it wilt overnight (12–24 hours). This intensifies its aroma and makes it safe for consumption.

Infuse the White Wine:

4

In a large bowl or jug, combine the white wine with the wilted woodruff and lemon slices.

5

Stir in the sugar until dissolved.

6

Cover and refrigerate for 1–2 hours to let the flavors infuse.

7

After infusing, remove the woodruff to prevent bitterness.

Finish the Punch:

8

Just before serving, add the chilled sparkling wine to the infused white wine mixture.

9

Gently stir to combine.

Serve:

10

Pour the Green Maibowle into glasses or a punch bowl.

11

Add fresh berries and ice cubes if desired.

12

Garnish with a lemon slice or a sprig of fresh mint or woodruff.

Recipe Notes :

  • Sweet Woodruff: Ensure the sweet woodruff is wilted overnight before use to reduce its coumarin content, making it safe for consumption.

  • Infusion Time: Limit the infusion of sweet woodruff in the white wine to 1–2 hours to prevent bitterness.

  • Non-Alcoholic Version: For a non-alcoholic alternative, substitute white wine with white grape juice and sparkling wine with sparkling water or lemon soda.

  • Flavor Variations: Experiment with adding other fruits like oranges or kiwi for added freshness and flavor.

  • Serving Tips: Serve chilled with ice cubes and garnish with lemon slices or fresh mint for an extra touch of elegance.
