For the Artichokes:
- 4 large globe artichokes
- 1 lemon, halved
- Salt, to taste
- Olive oil, for brushing
- Freshly ground black pepper, to taste
For the Herby Lemon Aioli:
- ½ cup mayonnaise
- 1 garlic clove, minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp finely chopped parsley
- 1 tbsp finely chopped basil
- 1 tsp Dijon mustard
- Salt and pepper to taste
Prep the Artichokes:
Trim the artichoke stems and top inch of each artichoke. Snip sharp tips from leaves.
Rub all cut surfaces with lemon to prevent browning.
Bring a large pot of salted water to a boil. Add artichokes and lemon halves. Simmer for 20–25 minutes until tender. Drain and let cool slightly.
Cut each artichoke in half lengthwise and remove the fuzzy choke with a spoon.
Grill the Artichokes:
Brush the cut sides with olive oil and season with salt and pepper.
Heat a grill or grill pan over medium-high heat.
Place artichokes cut-side down and grill for 5–7 minutes, until charred and smoky.
Make the Herby Lemon Aioli:
In a bowl, whisk together mayonnaise, garlic, lemon juice, lemon zest, mustard, and herbs.
Season with salt and pepper. Chill until ready to serve.
Serve:
Serve grilled artichokes warm or at room temperature with a side of herby lemon aioli for dipping.
