Kulfi Recipe – Pakistani Special

Kulfi is a dense, creamy, and indulgent frozen dessert that has been enjoyed in India for centuries. Unlike regular ice cream, kulfi is slow-cooked to concentrate milk flavors, giving it a rich texture and deep taste. Kulfi Ingredients :
- 1 litre full-fat milk
- 1/2 cup sugar (adjust to taste)
- 2 tbsp chopped pistachios
- 2 tbsp chopped almonds
- 1/2 tsp cardamom powder
- 2 tbsp khoya or condensed milk (optional, for richness)
- A pinch of saffron strands (optional)
Kulfi Instructions:
Heat milk in a heavy-bottomed pan and bring to a boil.
Simmer on low heat, stirring often, until milk reduces to almost half.
Add sugar and continue cooking until dissolved.
Stir in cardamom powder, saffron, nuts, and khoya or condensed milk if using.
Cook for a few more minutes until thick and creamy.
Let the mixture cool completely.
Pour into kulfi molds or small cups.
Freeze for 6–8 hours or until firm.
Demold and garnish with extra nuts before serving.
Garnish with fresh coriander and ginger juliennes. Serve hot.

Use full-fat milk for authentic creaminess
Stir frequently to prevent milk from burning
Cool before freezing to avoid ice crystals
Soak molds briefly in warm water for easy unmolding
