Mosaiko recipe – Greek Special

For the Base:
- 200g digestive biscuits (or any plain biscuits)
- 100g unsalted butter, melted
- 100g sugar
- 200g dark chocolate (or milk chocolate), chopped
- 2 large eggs
- 1 teaspoon vanilla extract
- A pinch of salt
For the Filling:
- 100g mixed nuts (walnuts, almonds, or hazelnuts), chopped
- 100g dried fruit (such as raisins or cranberries)
- Optional: 50g chocolate chips
How to make Mosaiko :
Prepare the Base:Crush the digestive biscuits into small pieces (not fine crumbs) and set aside.
Melt the Chocolate:In a heatproof bowl, melt the chocolate and butter together over a pot of simmering water (double boiler method) or in the microwave, stirring until smooth.
Mix the Ingredients:In a mixing bowl, whisk together the sugar, eggs, vanilla extract, and salt until well combined. Gradually add the melted chocolate mixture, stirring until smooth.
Combine with Biscuits:Gently fold the crushed biscuits, nuts, dried fruit, and optional chocolate chips into the chocolate mixture until evenly coated.
Assemble:Line a rectangular or square baking dish with parchment paper. Pour the mixture into the dish, pressing it down firmly to create an even layer.
Chill:Refrigerate for at least 4 hours, or overnight, until set.
Serve:Once firm, lift the dessert out of the dish using the parchment paper. Cut into squares or bars and serve chilled.
