Pasta de Sardine Ingredients :

  • 8 ounces of dried fettuccine pasta
  • 2 tablespoons of olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves of garlic, minced
  • Juice of 1 medium lemon
  • 1 can (3.75 ounces) of sardines in tomato sauce
  • ¼ cup of freshly grated Parmesan cheese
  • A pinch of red pepper flakes, to taste

How To Make Pasta de Sardine

Fill a large pot with water, lightly salt it, and bring it to a vigorous boil. Cook the fettuccine in the boiling water until it is nearly tender, approximately 8 minutes.

While the pasta is cooking, heat olive oil in a skillet over medium heat. Add the chopped onion and cook until it begins to soften, about 3 minutes. Stir in the minced garlic and cook until it becomes fragrant, about 1 minute. Add the sardines with their tomato sauce, stir to combine, and heat through for about 3 minutes. Reduce the heat to low and keep the mixture simmering.

Drain the cooked pasta and add it to the skillet with the sauce. Stir everything together to combine. Cover the skillet, turn off the heat, and let it sit for 3 minutes. Squeeze the juice of the lemon over the pasta and sauce, then divide the mixture among four serving plates. Garnish each serving with freshly grated Parmesan cheese and a sprinkle of red pepper flakes.
