Porchetta Ingredients:
- 1 kg pork belly, skin on
- 4 cloves garlic, minced
- 1 tbsp fennel seeds
- 1 tbsp rosemary, chopped
- 1 tbsp thyme, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Porchetta Instructions:
Score the pork skin in a crisscross pattern.
In a bowl, mix garlic, fennel seeds, rosemary, thyme, salt, and pepper.
Rub the herb mixture evenly over the meat side.
Roll the pork belly tightly and tie with kitchen twine.
Rub the outside with olive oil and extra salt.
Place on a roasting tray and preheat oven to 220°C.
Roast at high heat for 30 minutes to crisp the skin.
Reduce temperature to 180°C and continue roasting.
Cook until the meat is tender and fully cooked through.
Allow to rest for 10 minutes before slicing.
Slice into rounds and serve hot.
