Rice Kheer with Berry Compote Ingredients :
- 2 cups Rice Kheer
- 1½ cups blueberries
- 1½ cups strawberries, chopped
- ½ teaspoon ground cardamom
- 2 tablespoons honey, or to taste
- ½ teaspoon lemon juice
- ½ teaspoon rose essence
Garnish (Optional)
- 1 tablespoon sliced pistachios
- 1 tablespoon dried rose petals
How To Make Rice Kheer with Berry Compote
Berry Compote Instructions:
In a medium saucepan, combine blueberries and chopped strawberries. Add honey and mix thoroughly.
Cook over medium heat for 3 to 4 minutes until the berries begin to soften. Use the back of a spatula to gently mash the berries to release their juices.
Once the compote starts bubbling, remove from heat. Stir in lemon juice and rose essence.
Allow the compote to cool to room temperature. For best results, you can prepare the compote 2 to 3 days in advance and store it in an airtight jar in the refrigerator.
Assembling the Jars:
Spoon 2 to 3 tablespoons of berry compote into each jar.
Layer with ⅓ cup of rice pudding.
Garnish with sliced pistachios and dried rose petals.
