Roasted Albino Chicken Ingredients :
- 1 whole albino chicken (about 3-4 lbs)
- 4 cloves garlic, minced
- 2 lemons (one for juice, one for slices)
- Fresh herbs (such as thyme, rosemary, or parsley)
- 4 tbsp olive oil or melted butter
- Salt and pepper to taste
- 1 tsp paprika (optional)
- 1 onion, quartered (for the roasting pan)
- Vegetables (like carrots and potatoes, optional)
How to make Roasted Albino Chicken:
Preheat your oven to 425°F (220°C).
Prepare the Chicken:Rinse the chicken under cold water and pat it dry with paper towels. This helps achieve crispy skin.
Season the Chicken:In a bowl, mix the minced garlic, olive oil or melted butter, salt, pepper, and paprika.
Rub the mixture all over the chicken, including under the skin for extra flavor.
Squeeze the juice of one lemon over the chicken and place the used lemon halves inside the cavity along with some fresh herbs.
Arrange for Roasting:Place the onion and any additional vegetables in the bottom of a roasting pan. This will add flavor and help keep the chicken elevated.
Place the seasoned chicken on top of the vegetables, breast side up.
Roast the Chicken:Roast in the preheated oven for about 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Baste the chicken with its juices halfway through cooking for extra moisture and flavor.
Rest and Serve:Once cooked, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute for a more tender result.
Serve with roasted vegetables or your favorite sides.
Recipe Notes:
Seasoning Under Skin: Rubbing garlic-herb mixture beneath the skin adds flavour close to the meat, resulting in more aromatic roast.
Crispy Skin Tips: Pat the chicken dry well before roasting and roast at a high temperature at the start to help crisp the skin.
Vegetable Base: Using root vegetables like carrots, potatoes, or onions under the chicken helps elevate it and adds flavour to the drippings.
Resting Time: Let the chicken rest for 10-15 minutes after roasting so the juices redistribute and the meat stays moist when carved.
