Sayadieh Ingredients:

  • 500g (1 lb) firm white fish fillets (e.g., cod, haddock, or sea bass)
  • 2 cups basmati rice, rinsed
  • 2 large onions, thinly sliced
  • 2–3 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/4 tsp black pepper
  • Salt, to taste
  • 4 cups fish stock or water
  • Pine nuts or almonds, toasted (optional, for garnish)
  • Lemon wedges, for serving

Sayadieh Instructions:

Heat olive oil in a pan; sauté onions until deep golden brown and caramelized.

Remove half of the onions for garnish; keep the rest in the pan.

Add garlic and spices (cumin, coriander, turmeric, cinnamon) to the onions; cook for 1–2 minutes.

Stir in rice, coating grains with spiced onion mixture.

Pour in fish stock or water; bring to a boil, then reduce heat and simmer until rice is cooked and liquid absorbed (about 15–20 minutes).

Season fish fillets with salt and pepper; pan-fry or bake until cooked through.

Serve fish atop the spiced rice; sprinkle reserved caramelized onions and toasted nuts over the top.
