Seafood Rice Dish Ingredients:
- 2 cups long-grain rice
- 300–400 g mixed seafood (shrimp, calamari, mussels, fish pieces)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tomato, finely chopped or pureed
- 1 tsp paprika
- 1/2 tsp turmeric or saffron (optional)
- 1/2 tsp black pepper
- Salt to taste
- 3½ cups fish stock or water
- 1 tbsp lemon juice
- Fresh parsley or coriander for garnish
Seafood Rice Dish Instructions:
Rinse the rice thoroughly and drain well.
Heat olive oil in a wide pan over medium heat.
Add chopped onion and sauté until soft and translucent.
Add garlic and cook until fragrant.
Stir in tomato and cook until slightly reduced.
Add paprika, turmeric or saffron, pepper, and salt.
Mix well and cook the spices briefly.
Add rice and stir to coat with the seasoned oil.
Pour in fish stock and bring to a gentle boil.
Lower heat, cover, and cook until rice is almost tender.
Add mixed seafood evenly over the rice.
Cover again and cook until seafood is just cooked through.
Drizzle lemon juice over the rice.
Rest for a few minutes off heat.
Garnish with fresh herbs and serve hot.
