Spanish Cod Ingredients :
- 1 tablespoon butter
- 1 tablespoon olive oil
- ¼ cup finely diced onion
- 2 tablespoons minced fresh garlic
- 1 cup tomato sauce
- 15 cherry tomatoes, halved
- ½ cup chopped green olives
- ¼ cup deli-style marinated Italian vegetable salad, drained and roughly chopped
- A pinch of black pepper
- A pinch of cayenne pepper
- A pinch of paprika
- 6 (4-ounce) cod fillets
How To Make Spanish Cod Recipe :
Heat butter and olive oil in a large skillet over medium heat. Sauté onions and garlic until onions are just tender, ensuring garlic doesn’t brown.
Pour in tomato sauce and cherry tomatoes; bring to a simmer. Mix in green olives and marinated vegetables; season with black pepper, cayenne pepper, and paprika.
Place cod fillets into the sauce; cook over medium heat until the fillets flake easily with a fork, about 5 to 8 minutes. Serve promptly.
Recipe Notes
Soak Salted Cod: If using salted cod, soak in cold water 24–48 hours prior, changing water every 8 hours to remove excess salt.
Simmer Gently: Let the stew gently simmer to meld flavors without overcooking the cod.
Use Smoky Paprika: Smoked paprika adds vibrant color and a warm, smoky depth that complements the seafood.
Add Olives Late: Stir olives in near the end to preserve their texture and briny flavor.
Serve with Crusty Bread: Ideal for sopping up the richly flavored sauce and completing the dish.
