Tacos Gobernador Ingredients:
- 400 g shrimp, peeled and deveined
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 medium tomato, chopped
- 1–2 tbsp chipotle in adobo (optional)
- 1 cup shredded cheese (cheddar or Oaxaca)
- 1 tbsp butter or oil
- 6 small corn or flour tortillas
- Salt to taste
- Black pepper to taste
- Fresh cilantro, chopped
Tacos Gobernador Instructions:
Heat butter or oil in a pan over medium heat.
Add chopped onion and sauté until soft.
Add garlic and cook until fragrant.
Stir in chopped tomatoes and cook until slightly softened.
Add shrimp and cook until pink and tender.
Mix in chipotle and season with salt and pepper.
Cook until everything is well combined and slightly thickened.
Place tortillas on a pan and warm them lightly.
