Boureki Ingredients:
- 3 medium potatoes, thinly sliced
- 3 medium zucchinis, thinly sliced
- 1 large onion, finely chopped
- 200g (7 oz) feta cheese, crumbled
- 200g (7 oz) mizithra or ricotta cheese
- 1/4 cup fresh mint leaves, chopped
- 2 eggs, lightly beaten
- 1/2 cup milk or cream
- 3 tbsp olive oil
- Salt and black pepper, to taste
- Breadcrumbs (optional, for topping)
Boureki Instructions:
Preheat oven to 180°C (350°F).
Grease a baking dish with olive oil.
Layer half of the potato and zucchini slices at the bottom.
Sprinkle with onions, cheeses, and mint.
Add remaining potato and zucchini slices on top.
In a bowl, whisk eggs with milk or cream; season with salt and pepper.
Pour mixture evenly over layered vegetables.
Drizzle with olive oil and sprinkle breadcrumbs if using.
Bake for 50–60 minutes until golden and set.
Let rest 10 minutes before serving.
