- 1 cow or goat head (siri), cleaned and halved
- 2–3 trotters (paye), cleaned
- 4–5 tbsp ghee or oil
- 2 large onions, finely sliced
- 2 tbsp ginger-garlic paste
- 4–5 green chilies, chopped
- 1 tsp turmeric powder
- 2 tsp red chili powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 4–5 cups water or stock
- Salt, to taste
- Fresh coriander leaves, chopped for garnish
- Lemon wedges, for serving
Siri Paye Instructions:
Clean and parboil the head and trotters for 15–20 minutes to remove impurities; drain and rinse.
Heat ghee or oil in a large pot; sauté sliced onions until golden brown.
Add ginger-garlic paste and green chilies; cook until aromatic.
Stir in turmeric, chili, coriander, and cumin powders; sauté briefly.
Add the head and trotters to the pot; coat them with the spices.
Pour in water or stock; bring to a boil, then reduce heat and simmer gently for 6–8 hours until meat is tender and gelatinous.
Stir occasionally; adjust consistency by adding water if needed.
Sprinkle garam masala towards the end of cooking; mix well.
Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
Serve with lemon wedges on the side for extra tang.
