For the Noodles:
- 250g wide rice noodles (fresh or soaked dried noodles)
- 2 tbsp oil
Protein (Choose One):
- 200g chicken, beef, tofu, or shrimp
Vegetables:
- 1 cup Chinese broccoli (gai lan), cut
- 1 egg
- ½ onion (optional)
For the Pad See Ew Sauce:
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- ½ tsp vinegar
- 1–2 tbsp water
Pad See Ew Noodles Instructions:
Prepare rice noodles (soak or loosen fresh noodles).
Mix soy sauce, dark soy, oyster sauce, sugar, vinegar, and water in a bowl.
Heat oil in a wok and cook your protein until done; push aside.
Crack in the egg and scramble lightly.
Add onions and Chinese broccoli; stir-fry for 1–2 minutes.
Add noodles and pour the sauce over.
Toss on high heat until noodles absorb sauce and get slightly charred.
Adjust seasoning if needed and serve hot.
