Birria Tacos Ingredients:
- 1 kg beef chuck or goat meat
- 3 dried guajillo chilies
- 2 dried ancho chilies
- 1 onion
- 4 cloves garlic
- 2 tomatoes
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp cloves
- 1 tsp smoked paprika
- Salt to taste
- 2 tbsp oil
- Corn tortillas
- Shredded mozzarella or Oaxaca cheese
- Fresh cilantro, chopped
- Chopped onion
- Lime wedges
Birria Tacos Instructions:
Soak dried chilies in hot water until softened.
Blend chilies with garlic, onion, tomatoes, and spices into a smooth paste.
Heat oil in a pot and sear the meat until browned.
Pour the chili sauce over the meat and add water to cover.
Simmer on low heat until meat is tender and shreddable.
Remove meat and shred finely, reserve the broth.
Dip tortillas into the birria broth.
Fill tortillas with shredded meat and cheese.
Cook tacos on a hot skillet until crispy and golden.
Serve hot with broth for dipping, cilantro, onion, and lime.
