- 1 pound ground chicken
- 1 tablespoon peanut oil
- 1/2 onion, minced
- 1 cup diced red or green pepper
- 1 can (8 oz) water chestnuts, drained and minced
For the Sauce:
- 3 tablespoons soy sauce
- 3 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon peanut butter
- 1 tablespoon honey
- 2 teaspoons sweet chili sauce (Trader Joe’s!)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon powdered ginger
To serve :
- 1/4 cup crushed peanuts
- Lettuce or your favorite Asian salad
How To Make Asian Chicken Lettuce Wraps :
Whisk together the sauce ingredients until thoroughly combined. If using a firmer peanut butter, microwave the mixture for 30-60 seconds to melt it and ensure everything is well-mixed.
Heat 2 tablespoons of peanut oil in a frying pan. Once hot, add the ground chicken.
Cook until some pieces begin to brown. Add the minced onion and cook for about 5 minutes, or until the onion becomes translucent.
Stir in the diced peppers and minced water chestnuts, and cook for approximately 5 minutes, or until the peppers start to soften.
