Brioche French Toast Ingredients:

  • 4 eggs
  • 200ml single cream
  • ½ tsp vanilla seed paste
  • 1 tbsp golden caster sugar
  • 4 thick or 8 thin slices of day-old brioche
  • 25g butter, for frying
  • 1 tbsp vegetable oil, for frying
  • 12 rashers of bacon
  • 2 bananas, sliced
  • Maple syrup, for serving

How To Make Brioche French Toast

1

In a large bowl, vigorously whisk the eggs, then add the single cream, vanilla seed paste, and sugar. Whisk again until well combined.

2

When you’re ready to cook, preheat the oven to its lowest setting. Place a baking tray inside to warm up. Pour the cream mixture into a shallow dish or container that can accommodate the brioche slices in a single layer. Heat a griddle or frying pan over medium heat, and melt the butter and oil together.

3

Dip the brioche slices into the cream mixture, allowing them to soak for about 1 minute on each side until fully absorbed.

4

Remove the soaked brioche slices and place them on the hot griddle or pan (you may need to do this in batches). Cook for a few minutes on each side until golden brown and the inside is tender and moist. To check doneness, make a small cut in the middle with a knife – the inside should resemble cooked bread pudding. Keep the cooked slices warm in the oven while you cook the remaining batches.

5

Meanwhile, fry the bacon in a separate pan until crispy, about 5 minutes. Serve the French toast topped with crispy bacon, sliced bananas, and a drizzle of maple syrup.

Recipe Notes:

Prep Time: Minimal—about 5 minutes to whisk the custard and prep the slices.

Soaking Time: Dip briefly—just a few seconds per side—to avoid soggy slices while ensuring full flavor absorption.

Keeping Warm: Keep cooked slices warm in a 200 °F (93 °C) oven while working through batches.

Topping Ideas: Top with fresh berries, a dusting of powdered sugar, whipped cream, or warm syrup; a generous pat of butter also elevates texture and indulgence.
