Brioche French Toast Ingredients:
- 4 eggs
- 200ml single cream
- ½ tsp vanilla seed paste
- 1 tbsp golden caster sugar
- 4 thick or 8 thin slices of day-old brioche
- 25g butter, for frying
- 1 tbsp vegetable oil, for frying
- 12 rashers of bacon
- 2 bananas, sliced
- Maple syrup, for serving
How To Make Brioche French Toast
In a large bowl, vigorously whisk the eggs, then add the single cream, vanilla seed paste, and sugar. Whisk again until well combined.
When you’re ready to cook, preheat the oven to its lowest setting. Place a baking tray inside to warm up. Pour the cream mixture into a shallow dish or container that can accommodate the brioche slices in a single layer. Heat a griddle or frying pan over medium heat, and melt the butter and oil together.
Dip the brioche slices into the cream mixture, allowing them to soak for about 1 minute on each side until fully absorbed.
Remove the soaked brioche slices and place them on the hot griddle or pan (you may need to do this in batches). Cook for a few minutes on each side until golden brown and the inside is tender and moist. To check doneness, make a small cut in the middle with a knife – the inside should resemble cooked bread pudding. Keep the cooked slices warm in the oven while you cook the remaining batches.
Meanwhile, fry the bacon in a separate pan until crispy, about 5 minutes. Serve the French toast topped with crispy bacon, sliced bananas, and a drizzle of maple syrup.
