For the whole wheat buns :
- 1 cup warm milk
- 1/4 cup sugar
- 1 pkg Active Dry Yeast
- 1 cup all-purpose flour
- 3 cups whole wheat flour
- 3 tablespoons butter melted
- 2 eggs
- 3/4 tsp salt
For the Spiced Chicken Filling:
- 3 tablespoons oil I used EVOO
- 1 onion
- 4 cloves garlic
- 1 tsp grated fresh ginger
- 1 lb ground chicken
- 1 tsp smoked paprika
- 1 tsp coriander
- 1/4 tsp turmeric
- 1/4 tsp cumin
- 3 tablespoons tomato paste
- 1/3 tsp salt or to taste
- 1/3 tsp pepper
- 1/2 tsp chili powder optional
- 1/2 cup frozen peas thawed
- Black/white sesame seeds optional
Marinate the Chicken:
In a bowl, combine soy sauce, oyster sauce, sesame oil, honey, garlic, ginger, and black pepper.
Add the chicken and toss to coat. Marinate for at least 30 minutes (or up to overnight in the fridge).
Cook the Chicken:
Preheat a grill or skillet over medium heat. Cook the marinated chicken for about 5-7 minutes per side, or until fully cooked and golden brown. Remove from heat and let it rest before slicing.
Prepare the Buns:
If using store-bought buns, steam them according to package instructions. For homemade buns, follow your recipe.
Assemble the Buns:
Slice the cooked chicken into strips. Place a few pieces inside each bun, along with cucumber slices, shredded carrot, and fresh herbs.
Drizzle with chili sauce or sriracha if desired.
