  • 1 teaspoon minced ginger
  • 2 tablespoons rice vinegar
  • 1 teaspoon salt
  • 1 cucumber

Bring 2 cups of water to a boil, then add the minced ginger and white rice. Cover and simmer for 20 minutes or until the rice is cooked.

Once the rice is done, stir in the rice vinegar and salt until well combined.

Lay out the seaweed sheets.

Moisten your hands with water and divide the rice evenly between the 2 seaweed sheets, pressing it flat. Leave about half an inch of space at the top of each sheet uncovered with rice; this makes it easier to seal the sushi rolls.

Arrange the crab, cucumber, and cream cheese in a straight line about an inch from the bottom of the rice on each sheet, from left to right.

Carefully roll the sushi tightly from the bottom to the top, ensuring the seaweed sheets are tightly sealed without tearing.

Wet a very sharp knife and cut the rolls into individual pieces of sushi.
