  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder (adjust to taste)
  • 1 teaspoon ground ginger (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk (or chicken broth)
  • 1 cup frozen peas (optional)
  • Salt and pepper to taste
  • Fresh cilantro (for garnish, optional)

For Serving:

  • Cooked rice or naan bread

How to make Curried Sausage :

1

Cook the Sausages:In a large skillet, heat the olive oil over medium heat. Add the sausages and brown them on all sides. Once cooked through, remove from the skillet and set aside.

2

Sauté the Aromatics:In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.

3

Add Spices:Stir in the curry powder and ground ginger, cooking for another minute until fragrant.

4

Make the Sauce:Add the diced tomatoes and coconut milk (or broth) to the skillet. Bring to a simmer, then reduce the heat and let it cook for about 10 minutes, allowing the flavors to meld.

5

Combine:Return the sausages to the skillet and add the frozen peas (if using). Simmer for an additional 5-10 minutes until heated through. Season with salt and pepper to taste.

6

Serve:Serve the curried sausages over cooked rice or with naan bread, garnished with fresh cilantro if desired.
