Lebanese Tabbouleh Salad Ingredients:

  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup fine #1 bulgur
  • 2 bunches fresh curly parsley finely chopped (about 3 cups)
  • 2 firm tomatoes finely chopped
  • 2 green onions finely chopped
  • ¼ cup fresh mint leaves finely chopped

How to Make Lebanese Tabbouleh Salad

In a large bowl, whisk together the olive oil, lemon juice, salt, and pepper until thoroughly combined. Stir in the bulgur. Allow the bulgur to soak up the dressing, becoming plump and absorbing most of the moisture, which takes about 20 to 30 minutes.

Meanwhile, prepare the parsley, tomatoes, green onions, and mint by adding them to one side of the bowl with the bulgur, but do not mix yet.

Once the bulgur has absorbed the dressing and becomes plump, gently stir everything together until well combined. Serve the Tabbouleh salad at room temperature or chilled from the fridge.

Storage: Store any leftovers of the Tabbouleh salad in an airtight container. They will stay fresh for about 3-4 days in the refrigerator.

Make Ahead Tips: It’s beneficial to wash and dry the parsley a day or two in advance of chopping. This allows the parsley to dry thoroughly so that it doesn’t become too moist when chopped.

Sourcing: Fine bulgur can be found at Middle Eastern markets, natural-foods stores, or large supermarkets, typically located with other Middle Eastern ingredients. Ensure it is the type that does not require cooking for this recipe.

Substitutes: For grain-free options, you can substitute the bulgur with quinoa or riced cauliflower. However, for the most authentic taste, it’s recommended to follow the recipe as is.
