Menemen (Turkish scrambled eggs) Ingredients :
- 1 small onion (use less if large)
- 1 wax pepper, also known as banana pepper, or 1/2 green bell pepper (refer to notes)
- 1 large tomato, or 2 smaller tomatoes
- 1 tablespoon of oil (olive oil is preferred, or use your preferred oil)
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/4 teaspoon of oregano
- 2 eggs
- A pinch of salt
- A pinch of pepper
How to Make Menemen (Turkish scrambled eggs)
Dice the onion, pepper, and tomato into small pieces.
Heat the oil in a small skillet, then add the onion and pepper. Cook for a couple of minutes until the onion softens.
Add the tomato, cumin, paprika, oregano, salt, and pepper to the skillet. Cook for a few minutes until everything softens and the tomato breaks down into a sauce-like consistency.
