Menemen (Turkish scrambled eggs) Ingredients :

  • 1 small onion (use less if large)
  • 1 wax pepper, also known as banana pepper, or 1/2 green bell pepper (refer to notes)
  • 1 large tomato, or 2 smaller tomatoes
  • 1 tablespoon of oil (olive oil is preferred, or use your preferred oil)
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • 1/4 teaspoon of oregano
  • 2 eggs
  • A pinch of salt
  • A pinch of pepper

How to Make Menemen (Turkish scrambled eggs)

1

Dice the onion, pepper, and tomato into small pieces.

2

Heat the oil in a small skillet, then add the onion and pepper. Cook for a couple of minutes until the onion softens.

3

Add the tomato, cumin, paprika, oregano, salt, and pepper to the skillet. Cook for a few minutes until everything softens and the tomato breaks down into a sauce-like consistency.

4

Crack the eggs into the skillet and stir gently to break them up and mix with the vegetables. Remove from the heat just before the eggs are fully cooked; they will continue to cook off the heat.

Recipe Notes:

Pepper Variations: While green bell peppers are commonly used, you can experiment with other varieties like banana peppers or even mild chili peppers for added flavor.

Spice Adjustments: Adjust the amount of paprika and cumin according to your taste preference. For a spicier version, consider adding a pinch of red pepper flakes.

Egg Consistency: For creamier eggs, cook them gently and avoid overcooking. The eggs should remain soft and slightly runny when removed from the heat.

Serving Suggestions: Menemen is traditionally served with crusty bread or flatbreads. It can also be accompanied by olives, feta cheese, or a side salad for a complete meal.
