For the Steak Bites:
- 250g sirloin or ribeye steak, cut into bite-sized cubes
- Salt and black pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 garlic clove, smashed
- 1 sprig fresh thyme or rosemary (optional)
For the Mini Fries:
- 2 medium russet potatoes, peeled
- Vegetable oil, for frying
- Salt, to taste
Optional Dips or Garnishes:
- Garlic aioli or Dijon mustard
- Fresh parsley, chopped
- Herb butter
Prepare the Mini Fries:
Cut peeled potatoes into thin matchstick-size fries.
Rinse in cold water and soak for 15 minutes to remove excess starch.
Drain and dry thoroughly with a clean towel.
Heat oil in a deep pan to 325°F (165°C).
Fry in small batches for 3 minutes until soft but pale. Drain on paper towels.
Increase oil heat to 375°F (190°C) and fry again for 2–3 minutes until crispy and golden.
Drain and sprinkle with salt.
Cook the Steak Bites:
Season steak cubes with salt and pepper.
Heat a non-stick or cast iron pan over medium-high heat. Add olive oil.
Sear steak bites for 1–2 minutes per side until browned.
Add butter, garlic, and herbs.
Toss to coat for flavor.
Remove from heat and let rest for a couple of minutes.
Serve:
Arrange steak bites and fries together on a platter or toothpick them for easy snacking.
Garnish with chopped parsley or a small dollop of herb butter on each steak cube.
Serve with garlic aioli, Dijon mustard, or your favorite dipping sauce on the side.
