Papas con Chorizo Ingredients:
- 3 medium potatoes, peeled and diced
- ½ pound Mexican chorizo, casing removed
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 2 tablespoons vegetable oil
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ½ teaspoon paprika (optional)
For Serving (Optional):
- Warm corn or flour tortillas
- Chopped fresh cilantro
- Crumbled queso fresco
- Salsa (red or green)
Cook the Potatoes:
Heat 1 tablespoon of oil in a skillet over medium heat.
Add the diced potatoes and season with salt, pepper, and paprika.
Cook for 10–12 minutes, stirring occasionally, until the potatoes are golden and fork-tender.
Remove the potatoes from the skillet and set aside.
Cook the Chorizo:
In the same skillet, heat 1 tablespoon of oil over medium heat.
Add the chorizo and cook, breaking it apart with a spatula, for 5–6 minutes until browned.
Add the onions and garlic, and cook for another 2–3 minutes, until soft and fragrant.
Combine and Finish:
Return the cooked potatoes to the skillet with the chorizo mixture.
Stir everything together and let cook for 2 more minutes, so the flavors blend.

Serve hot with warm tortillas, fresh cilantro, crumbled queso fresco, and salsa.
