  • 1 large egg yolk
  • 2-3 tablespoons ice water

For the Filling:

  • 2 cups roasted red kuri squash puree (or other winter squash)
  • 3/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup heavy cream

Prepare the Pie Crust:

In a large bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

Roll Out the Dough:
