Sausage and Pinto Bean Soup Ingredients :
- 1 lb (450g) sausage (pork, chicken, or a plant-based alternative), sliced or crumbled
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 carrots, sliced
- 1 celery stalk, diced
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- Salt and black pepper to taste
- 2 cups fresh spinach or kale (optional)
- Fresh parsley for garnish (optional)
Cook the Sausage:
Heat olive oil in a large pot or Dutch oven over medium heat.
Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove sausage from the pot and set aside.
Sauté the Vegetables:
In the same pot, add the diced onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
Combine Ingredients:
Return the cooked sausage to the pot.
