  • 1 lb (450g) sausage (pork, chicken, or a plant-based alternative), sliced or crumbled
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, sliced
  • 1 celery stalk, diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable or chicken broth
