Shakshuka Ingredients:
- 1 tablespoon olive oil
- 1 small onion (diced)
- 1 small red bell pepper (diced)
- 2 cloves garlic (minced)
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and pepper (to taste)
- 4 large eggs
- 1/4 cup fresh parsley or cilantro (chopped, for garnish)
- Optional: crumbled feta cheese (for topping)
- Optional: crusty bread (for serving)
Prepare the Sauce:
Heat olive oil in a skillet over medium heat. Add the onion and red bell pepper, and cook until softened, about 5-7 minutes.
Add the garlic and cook for another minute until fragrant.
Stir in the diced tomatoes, tomato paste, cumin, paprika, coriander, and cayenne pepper (if using). Season with salt and pepper.
Simmer the mixture, stirring occasionally, for 10-15 minutes until the sauce thickens slightly.
Add the Eggs:
Create small wells in the sauce using the back of a spoon. Gently crack an egg into each well.
Cover the skillet with a lid and cook over low heat for about 5-7 minutes, or until the egg whites are set but the yolks are still slightly runny. For firmer yolks, cook for an additional 1-2 minutes.
Garnish and Serve:
Remove from heat and garnish with fresh parsley or cilantro. Optionally, sprinkle with crumbled feta cheese.
