Shrimp Fried Rice Ingredients :
- 1 pound of medium-sized uncooked shrimp, peeled and deveined (about 26-30 shrimp)
- 1 teaspoon of cornstarch
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of freshly ground black pepper
- 3 tablespoons of light olive oil or canola oil
- 4 large eggs, beaten
- 1/4 cup of finely chopped green onion
- 5 cups of leftover white rice, chilled (rinse the rice before cooking)
- 12 ounces of frozen carrots and peas, thawed
- 2 tablespoons of soy sauce or coconut aminos (adjust to taste)
- 1 1/2 teaspoons of sesame oil
How to Make Shrimp Fried Rice Recipe:
In a medium bowl, combine the shrimp with cornstarch, salt, and pepper. Allow to marinate at room temperature for 10 minutes.
Heat a large non-stick skillet over medium-high heat. Once the skillet is hot, add 2 tablespoons of cooking oil. Add the shrimp in a single layer and cook for about 1 minute per side until they are fully cooked and opaque. Transfer the cooked shrimp to a bowl.
In the same skillet over medium heat, add the beaten eggs. Use a spatula to scramble the eggs until they are no longer runny. Transfer the scrambled eggs to a bowl.
Wipe down the skillet with a paper towel and return it to medium-high heat. Add 1 tablespoon of oil and the chopped green onions. Sauté the green onions until fragrant, about 30 seconds.
Stir in the rice, spreading it evenly in the skillet. Let it cook without disturbing for 1 to 2 minutes until it starts to sizzle, then stir and sauté for another 1 to 2 minutes.
Drizzle 2 tablespoons of soy sauce (adjust to taste) over the rice and mix well. Add the sesame oil and the thawed carrots and peas, stirring until well combined.
Return the cooked shrimp and scrambled eggs to the skillet. Mix everything together and continue cooking until the rice is heated through and sizzling, stirring frequently.
Adjust seasoning with more soy sauce if desired. Serve hot and enjoy!
