Aji de Gallina Ingredients:
- 2 cups cooked chicken, shredded
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2–3 tbsp aji amarillo paste
- 1/2 cup milk
- 2 slices bread, soaked in milk
- 1/4 cup grated cheese
- 2 tbsp oil
- Salt to taste
- Black pepper to taste
- Boiled potatoes and rice for serving
- Boiled eggs and olives for garnish
Aji de Gallina Instructions:
Heat oil in a pan over medium heat.
Add chopped onion and cook until soft.
Add garlic and sauté until fragrant.
Stir in aji amarillo paste and cook briefly.
Blend soaked bread with milk until smooth.
Add the mixture to the pan and stir well.
Add shredded chicken and mix evenly.
