Loukaniko with Potatoes Ingredients:
- 300–350g loukaniko (Greek sausage), sliced
- 4 medium potatoes, cubed
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tsp dried oregano
- ½ tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- ½ lemon (for squeezing)
- Fresh parsley for garnish
Loukaniko with Potatoes Instructions:
Heat olive oil in a pan and sauté onion until soft.
Add loukaniko slices and cook until lightly browned.
Add potatoes and stir well to coat in the oil and sausage fat.
Season with oregano, paprika, salt, and pepper.
Cover and cook for 15–20 minutes, stirring occasionally.
Add a splash of water if needed to help potatoes soften.
Once potatoes are tender and golden, squeeze lemon juice on top.
Garnish with parsley and serve warm.
Recipe Notes :
Orange zest adds a traditional Greek flavor and enhances the sausage’s aroma.
For crispier texture, fry the potatoes separately before combining.
If loukaniko isn’t available, smoked or Italian sausage works well.
Use good-quality olive oil for authentic Mediterranean richness.
Add bell peppers or tomatoes for an easy Mediterranean vegetable boost.
