Marry Me Shrimp Pasta Recipe Ingredients:
- 8 oz pasta (linguine or fettuccine works best)
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional, adjust to taste)
- 1/2 cup sun-dried tomatoes, chopped (packed in oil, drained)
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Cook the Pasta:
Cook the pasta according to package directions.
Drain and set aside, reserving about 1/2 cup of pasta water.
Cook the Shrimp:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
Season the shrimp with salt and pepper. Add the shrimp to the pan and cook for 1-2 minutes per side, until pink and cooked through.
Remove the shrimp from the skillet and set aside.
Make the Sauce:
In the same skillet, add the remaining 1 tablespoon of olive oil and saute the garlic for about 30 seconds, until fragrant.
Add the red pepper flakes (if using) and sun-dried tomatoes.
Stir and cook for another 2 minutes.
Add the Liquids:
Pour in the chicken broth and bring to a simmer.
Allow it to reduce slightly, then stir in the heavy cream and Parmesan cheese.
Continue to cook for 3-4 minutes, letting the sauce thicken.
Combine the Pasta and Shrimp:
Add the cooked pasta to the skillet, tossing to coat it with the creamy sauce.
If the sauce is too thick, add a little reserved pasta water to loosen it up.
Return the shrimp to the skillet and toss everything together.
Finish the Dish:
Stir in the lemon juice and adjust seasoning with salt and pepper, to taste.
Serve:
Garnish with fresh basil or parsley and serve immediately.
Recipe Notes:
Shrimp: Use large shrimp for the best taste and texture.
Pasta: Linguine or fettuccine works best, but any pasta will do.
Sun-Dried Tomatoes: Use sun-dried tomatoes packed in oil for more flavor.
Make-Ahead: You can cook the shrimp and sauce ahead of time and reheat it.
Serve: Pair with a salad and garlic bread for a complete meal.
