One-Pan Spanish Garlic Rice with Shrimp Ingredients :

  • 1/4 cup of extra virgin olive oil (60 ml)
  • 1 head of garlic
  • 3 dried small cayenne peppers
  • 12 raw jumbo shrimp, peeled and deveined
  • 1/2 teaspoon of sweet smoked Spanish paprika (1.15 grams)
  • 1 cup of uncooked round rice (200 grams)
  • 3 cups of vegetable broth (710 ml)
  • 1/3 cup of frozen peas (45 grams)
  • A handful of finely chopped parsley
  • Sea salt and black pepper

How to Make One-Pan Spanish Garlic Rice with Shrimp

Heat a large frying pan over medium heat and pour in 1/4 cup of extra virgin olive oil.

Take 1 head of garlic, peel the cloves, and thinly slice each one.

Finely chop 3 small dried cayenne peppers.

After heating the olive oil for 3 minutes, add the sliced garlic and chopped cayenne peppers. Stir them into the olive oil and let the garlic poach gently.

Meanwhile, pat dry 12 raw jumbo shrimp (peeled and deveined) with paper towels. Season one side of the shrimp with sea salt and black pepper.

Once the garlic is lightly sautéed after about 3 minutes, add the shrimp to the pan in a single layer. After 1 minute, flip the shrimp to cook the other side. Cook for a total of 2 minutes (1 minute per side). Remove the shrimp from the pan and cover them with foil.

Stir in 1/2 teaspoon of sweet smoked paprika with the garlic. Then add 1 cup of uncooked round rice to the pan. Season with sea salt and black pepper, and mix well. Pour in 3 cups of vegetable broth and stir to combine everything evenly. Increase the heat to medium-high.

After 10 minutes, when most of the broth has been absorbed by the rice but there is still some remaining, add 1/3 cup of frozen peas. Mix everything together once more and reduce the heat to low-medium.

After 3 to 4 minutes, when there is almost no broth left, return the shrimp to the pan. Remove the pan from the heat, cover it with a lid, and let it sit for another 3 to 4 minutes. Remove the lid, sprinkle finely chopped parsley over the dish, and enjoy!
