Bellini Recipe – Italian Special

The Classic Bellini Cocktail features just two ingredients: peaches and Prosecco, creating an Italian beverage ideal for brunch or as an aperitif.

Italian Bellini Ingredients:

  • 1½ pounds ripe peaches*, about 4, peeled, pitted, and sliced
  • 2 ounces peach puree
  • 4 ounces chilled prosecco
  • Peach slices, for garnish
  • Fresh mint, for garnish

How to Make Bellini

Prepare the peach purée by blending peeled, pitted, and sliced peaches in a blender until smooth.

For each cocktail, pour 2 ounces (¼ cup) of peach purée into a champagne flute and top it off with Prosecco. Gently stir to mix. Garnish with a peach slice and a sprig of fresh mint.

Recipe Notes:
Frozen peaches, thawed before using, are ideal for this recipe.
