Bellini Recipe – Italian Special

Italian Bellini Ingredients:

  • 1½ pounds ripe peaches*, about 4, peeled, pitted, and sliced
  • 2 ounces peach puree
  • 4 ounces chilled prosecco
  • Peach slices, for garnish
  • Fresh mint, for garnish

How to Make Bellini

Prepare the peach purée by blending peeled, pitted, and sliced peaches in a blender until smooth.

For each cocktail, pour 2 ounces (¼ cup) of peach purée into a champagne flute and top it off with Prosecco. Gently stir to mix. Garnish with a peach slice and a sprig of fresh mint.

Recipe Notes:

Use ripe white peaches if possible—or sweet yellow peaches when unavailable—to ensure a naturally sweet purée.

Peel and pit the peaches, then blend until smooth; straining is optional depending on texture preference.

Chill both the peach purée and prosecco ahead of time to maintain bubbles and freshness.

Gently pour prosecco over the purée—about twice as much prosecco as peach purée—then stir lightly to combine.

Serve immediately in a chilled flute; garnish with a peach slice or a sprig of mint if desired.
