For the Flatbread Dough Ingredients:

- 2 tbsp olive oil
- 2 1/4 tsp (1 packet) active dry yeast
- 1 tsp sugar
- 1 tsp salt
For the Topping:
- 1 large onion, thinly sliced
- 1 tbsp olive oil
- 4-6 fresh figs, sliced or 1/2 cup dried figs, chopped
- 1/4 cup crumbled goat cheese or feta cheese
- 2 tbsp balsamic vinegar
- 1-2 tbsp honey
- Fresh thyme or rosemary leaves (optional)
- Salt and pepper to taste
Prepare the Dough:
Activate Yeast: In a small bowl, mix 1 cup warm water with 1 tsp sugar. Sprinkle 2 1/4 tsp yeast over the water, stir, and let sit for 5-10 minutes until frothy.
Mix Dough: In a large bowl, combine 2 cups flour and 1 tsp salt. Create a well in the center and add the yeast mixture and 2 tbsp olive oil. Mix until a dough forms.
Knead Dough: Turn the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
Caramelize Onions:
