Menemen (Turkish scrambled eggs) Ingredients :
- 1 small onion (use less if large)
- 1 wax pepper, also known as banana pepper, or 1/2 green bell pepper (refer to notes)
- 1 large tomato, or 2 smaller tomatoes
- 1 tablespoon of oil (olive oil is preferred, or use your preferred oil)
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/4 teaspoon of oregano
- 2 eggs
- A pinch of salt
- A pinch of pepper
How to Make Menemen (Turkish scrambled eggs)

Dice the onion, pepper, and tomato into small pieces.

Heat the oil in a small skillet, then add the onion and pepper. Cook for a couple of minutes until the onion softens.

Add the tomato, cumin, paprika, oregano, salt, and pepper to the skillet. Cook for a few minutes until everything softens and the tomato breaks down into a sauce-like consistency.

Crack the eggs into the skillet and stir gently to break them up and mix with the vegetables. Remove from the heat just before the eggs are fully cooked; they will continue to cook off the heat.
